Ingredients:

  • For the Lamb Ribs:

    • 2 lbs (900g) lamb ribs
    • 2-3 cloves garlic, minced

    • Salt and freshly ground black pepper
    • Juice of 1 lemon
  • For the Mint Sauce:

    • 1 cup fresh mint leaves, finely chopped
    • 2 tablespoons sugar
    • 1/4 cup boiling water
    • 1/4 cup white wine vinegar
    • A pinch of salt

Instructions:

  1. Prepare the Lamb Ribs:

    • Preheat your oven to 350°F (175°C).
    • In a small bowl, mix together the minced garlic, olive oil, rosemary, thyme, salt, and pepper to create a marinade.
    • Rub the marinade all over the lamb ribs, making sure they are well coated. Drizzle with lemon juice.
